Marriott Singapore | A Magical Christmas Feast

9th November 2015.
The Christmas and New Year season is about a month’s time away. The hotels, restaurants, shops and even the Gardens by the Bay are gearing up for the festive season ahead. Marriott Singapore Tang Plaza Hotel is presenting its Christmas Magic in the form of festive takeaways and buffets to celebrate the festive season.

Some of the items on offer in their Magic of Christmas buffet at Marriott Café include the classic seafood offerings of Tiger Prawns and Oysters as well charcuterie items like the Proscuitto di San Daniele and Pork Rilettes to begin with.

Some other items on offer also include the Foie Gras Royal with Figs Coulis, a savoury and smooth foie gras mousse topped with sweet fig coulis. For a buffet standard the foie gras mousse is quite good, fragrant and does not have that pungent game-like flavour. There are also herb-marinated gravlax and roast beef slices.

However, the stars of the buffet at Marriott Café and the available takeaways are:

Pancetta Stuffed Roasted Pork Saddle | Okay or inconsistent.
You could hear the sound of the skin crackling as the chef slices it for you, inspiring some excitement to savour this dish. If you are lucky, you would get the bits with the nice crackling skin. If you are unlucky like me, you get a dry portion of the meat without any crackling. The accompanying apple sauce helps.

Truffle Buttered Roast Turkey with Finanziera Terrine and Madeira Sauce | Good.
This is available as take-away and the hotel only prepares 20 of these turkeys because of the amount of ingredients and effort to prepare them. The meat is very tender and juicy especially at the thigh area. However, certain parts such as the breast area tends to be dry, as expected of a roast. The Madeira sauce helps a bit to offset that dryness. If you are wondering what the Finanziera Terrine is, it is a dish originated from Piedmont in Northern Italy, finanziera is a main course made with organ meats. In history, it is a considered a dish that only the rich could afford.

Honey & Clove Glazed Ham | Excellent.
The Honey & Clove Glazed Ham (Bone-in) served with Cinnamon Pineapple Sauce is one of my favourites. This is just packed with flavour and juiciness throughout and went very well with the cinnamon pineapple sauce. The ham has always been a classic staple of Christmas feasts. This is delicious and brings back nostalgia of rare Christmas family treats when we could afford one.

Baked Salt Crusted Whole Red Snapper with Salsa Verde | A tad salty but decent.
The Baked Salt Crusted Whole Red Snapper with Salsa Verde was rather decent as well. Before being served, it resembles a giant taiyaki made with sea salt. The sea salt preparation has kept the fish juicy and succulent, scoring high marks for texture. The accompanying salsa verde was excellent too.

Kaya Namachoco Yule Logcake | Rich and Good.
The Christmas Feast will have its classic pastries, cakes and desserts but the one dessert that stood out for me the most is the indulgent, rich and delicious Kaya Namachoco Yule Logcake. A must-try for chocolate fanatics. “Namachoco” refers the style of chocolate made popular by Japan’s Royce where quality milk chocolate and fresh cream were mixed to create a very rich and smooth mousse. The core of the log cake is a layer of sponge cake with kaya within. This should go well with a cup of tea preferably citrus or orange and enjoyed as a sweet ending to a Christmas feast.

The Festive Buffet lasts from 1st to 30th of December. There are also special Thanksgiving Dinners on the 26th of November as well as a New Year’s Eve dinner with live-performances John Molina with Kruger and High Impact.
