A couple of days after posting about E’spuma Lab, I found
myself back at the little eatery in POMO to try out some of its new items
including a Sous Vide Eggs with Smoked Salmon as well as their Sous Vide Chicken
Breast with Pesto Sauce.
The egg was a clever and excellent pairing of soft, runny
eggs with savoury slices of smoked salmon, crispy fish skin and a light drizzle
of soy sauce. I enjoyed the variation of textures within this egg dish. The
flavours worked pretty well too.
Most impressive on the new menu was the Sous Vide Chicken
Breast which was amazingly tender and juicy with crispy skin. My only complaint
is that the meat fibre was slightly on the rougher side but otherwise it was
pretty decent and it is easily one of my favourites along with the Beef
Rendang.
I was then back again with Kenji to try out more of their
new items just recently. This time round, I had the recommended Cajun Chicken
with Rice. While nothing out of the ordinary compared to Beef Rendang with
potato foam etc. The Cajun Chicken with Rice is one well-executed classic. The Cajun
Chicken could have a stronger Cajun flavour but the meat was excellent. The
curry sauce that accompanied the dish is also not bad and very smooth.
So far the food at E’spuma Lab has been consistently decent
and offers a pretty good value Set Lunch at 8.80 SGD nett which consist of a drink, a
delicious bowl of Mushroom Soup and a choice of main course. The calamari or
durian dessert is no longer part of the set lunch.
